My Favorite Winter Recipie


Masala Chickpea Soup

1 carton vegetable broth
4 cups water
1/4 cup of rice
Smidge butter/olive oil
3 cups chopped onion
2 cups chopped celery
1tbsp masala
1tsp garlic powder
1tsp chili powder
28 oz can diced tomatoes
19 oz can chick-peas (i usually drain them)
1tbsp molasses

empty carton of vegetable broth into a large pot and add rice
bring to a boil and simmer.
in a large pan add butter, onion and celery.
cook on high heat until veggies are soft and translucent.
when your veggies are ready, use a little bit of water to lift all the drippings off the bottom of the pan.
pour the entire contents of the veggie pan into the rice pot.
add spices.
after the rice has been simmering for about 30 min add the tomatoes, beans, and molasses.
let the flavors mingle for at least 10 min
and
serve.

I find soup is a really great dish to be creative with.
Feel free to add your own inspired ingredients to this recipe.
I know mine is never the same twice.
For example I will often double the tomatoes, use fresh garlic, and add a little bit of maple syrup...mmmm
